What's a medium of voice acting you'd love to work on, but haven't really had the opportunity to do (whether it comes down to not living in the right area, not being connected with certain studios, or having access to the auditions?)
I know a lot of people want to do anime, and I feel really lucky to have done a fair amount of that so far. But personally, I'd also love to do radio commercials/imaging (especially for rock stations), and toys.* I'd also love to do weird random things like elevator voices. I have no idea how they choose people for stuff like that, haha.
I DID get to do a lot of phone messaging projects this past year thanks to getting connected with a site that has a lot of them. So that was one previous goal crossed off the list.
(*Technically, I'm a Wonder Woman doll. But that was kind of a lucky fluke---I'd love to do more somehow!)

A Wonder Woman doll? That's awesome!
I really want to start doing a few dual narration audiobooks. The thing is, most of the ones I've seen seeking a male/female narrator team are 18+ romance books, which goes out of my comfort zone, so I haven't had the chance yet. I've been in a couple fully-cast audio fanfic projects, but full-cast just isn't the same thing as that one-on-one you-and-me take the world by storm with just 2 VAs and a bajillion characters feeling. =)
Also anime, of course -- or something like a Disney animated film. XD

Animated films are a medium I'd certainly love to try my hand in.
Most of my work stems in video games, and often times, supporting characters that appear briefly, solo avatars, or enemy NPC's that don't do much else besides scream, bark taunts and die. As a writer, one of my favorite parts of writing a character is development; having them transform from one person at the start of any given script to a new, better person entirely by the end. I'd love to go through that kind of transition from a character perspective.
That or narrate just ONE Viagra Commercial. If I can put that on my resume one day, I can finally be content.

Oooh! I'd LOVE to voice some toys/action figures! Or those kids books that talk to them as they read. But mostly the toys. That'd be cool!
That also stems from my love of voice matching/impressions. I do a fair bit of that already, but I'd love to do way more than the little bit I have done for parodies and internet projects. Like, voice match for trailers, or TV versions of movies, or even video games based on the movies/tv shows. That'd just be the best. Also, I think at least one slot on the VO bucket list for everyone is voicing for a Disney animated movie. Or even TV series. But mainly movie. Voicing a toy kiosk at a wal-mart or target would be a hoot as well. OH WAIT, to top it all off, I'd love to be one of the voices of Disneyland. Now that'd be a cool gig.
I can't think of any more at the moment, but those are definitely some!

I would love to do character work in animation and video games. I think I would like to be a voice for a toy as well, though I have mixed feelings on that. On the one hand it would be cool to be the voice of a beloved childrens toy, on the other hand (as a parent) I know just how annoying those toys can be when you have heard them say the same things for the umpteenth (totally a real number) time!
I wouldn't mind doing voice over for sales videos or corporate training. I got to dabble in this a little back when I first started and was still working for a large lizard loving insurance company. It was actually kind of fun.

One of my bucket list goals is to voice an anime character in both English + Japanese, but I'd also like to do an otome game. Outside of that, doing foreign-translated movies, radio/commercials, or audiobooks would be fun

I love doing video games, and I'd like to do more. Right now I do a lot of work on HOPA/casual style games, and it's a blast, but I'd REALLY love to do something at least once for an outfit like NIS-A, Square, etc., because the scripts always seem like they're so much fun.
I had an Atari 2600 as a kid, and I've been hooked on video games ever since. When I see a title on the shelf that I've done something for, I squeal like a kid again.
I'd love to get into a few more mainstream roles, too. (To be fair, I've worked with franchises as an official "sound-alike" for mainstream characters, but some time soon, I'd like to be an original, and not the second-banana. Kinda hard, though, when you work out of Cincinnati.) ; )
Radio ads are really fun, if you get the right sound director, and a bit awkward and stressful if you're not on the same wavelength, but that's any VA job. Though, I'll admit, it's easy to say "our business cares for you" wrong in a hundred ways, but it's pretty easy to get "muahahaha! I shall DESTROY YOU!" right in about 3 or 4 tries. ; )

"Male Voice Option".
I know this sounds stupidly simplistic considering my current accomplishments, but I've always enjoyed the games (usually JRPG dungeon crawlers) that let you select from a set of 10-20 'voice types' for each character. LadyStardust would know what I'm talking about, having done such for both Dynasty Warriors as well as Xenoblade Chronicles.

I can't think of any more at the moment, but those are definitely some! Your goals are really similar to mine! (I shamelessly own two of my teenage Wonder Woman action figure...one to keep on display in the box and one that I take out and play with.) One of my former voice coaches used to do a TON of toys but that's when she lived in San Francisco, and it sounds like the majority of toy stuff is done either there or in Hong Kong, rather than LA I might try reaching out to a couple major companies regardless and just see if there's anyone they can point me to. Also I feel like a lot of kids' stuff is going the way of mobile apps these days. I've done some of those, although I don't think many people downloaded them... the scripts were very Google Translate-y but they wanted it read as written, so it was a bit awkward. That or narrate just ONE Viagra Commercial. If I can put that on my resume one day, I can finally be content. I always have the classic rock station on at work, and there's this one obnoxious Viagra commercial that plays constantly. The narrator says "Now you can get Viagra at YUUUGE discounts!" Yes, "yuge". Like Donald Trump.

I will forever be that nerd who dreams of getting into a Super Robot Wars game. If only to have total permission to be totally cheesy and shout out complicated Engrish attack names. But seriously, I haven't thought of this really since making this effort to get back into things. On the local level, I'd love a chance at radio commercials or even some audio drama theater. I used to do commercials during my big podcast days but the only one that got any attention was the one I did for a Hurricane Katrina fundraiser. Otherwise, I would like to try my hand with say visual novels or some kind of video game as that's territory I've yet to approach.

Gosh, that all sounds fun. I think I'd most love to record for animated TV shows or movies! I love the idea of working off a pictures or a storyboard and just acting along to the animation. I've gotten to do a bit of that with some college animations, and it's always so cool to me! I'd also really love to voice in a Dreamworks film. (And lowkey would *love* to get the opportunity to voice in something like Steven Universe. Or actually Steven Universe. hhhh)
I also wanna do video games too. The way The Last of Us was recorded looks awesome to me--a mix of voice acting and body acting. I feel like that's an interesting mix.(Also, I really like that movie acting they got going on. It's really admirable and I'd love to improve on it!)
I think my favorite thing about animation + video game acting is getting to see the development--from animatic to animation, from script to video game. I'd love to be involved in the process.
Aaaand yeah. That's about it for me. I'm easily pleased? :'D
EDIT: Oh! And of course I'd love to do anime at one point. Definitely a location thing right now, but I'm hoping to change that real soon! I just want to make sure I'm ready.

Ever do a walla session where you had to walla for four minutes straight?
I'd love to do that.
Hell, I'd love to just do a walla session.
